Este a\u00f1o hemos querido ir un paso m\u00e1s all\u00e1 y hemos perfeccionado nuestra receta de coca incorporando nuestra <b data-path-to-node=\"3\" data-index-in-node=\"253\">Miel de Mil Flores<\/b> directamente en la emulsi\u00f3n de la masa.<\/p>\n<p data-path-to-node=\"4\">\u00bfEl resultado? Una coca con una miga m\u00e1s h\u00fameda, un aroma que transporta a nuestras monta\u00f1as y, sobre todo, una conservaci\u00f3n natural que la mantiene tierna durante mucho m\u00e1s tiempo que las cocas hechas solo con az\u00facar refinado.<\/p>\n<h3 data-path-to-node=\"5\">\ud83d\udcdd Ficha t\u00e9cnica del panadero<\/h3>\n<ul data-path-to-node=\"6\">\n<li>\n<p data-path-to-node=\"6,0,0\"><b data-path-to-node=\"6,0,0\" data-index-in-node=\"0\">Tiempo total:<\/b> Unas 4 horas (la paciencia es nuestro ingrediente secreto).<\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"6,1,0\"><b data-path-to-node=\"6,1,0\" data-index-in-node=\"0\">Dificultad:<\/b> Media-Alta (requiere respetar los tiempos de reposo).<\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"6,2,0\"><b data-path-to-node=\"6,2,0\" data-index-in-node=\"0\">Rendimiento:<\/b> 1 coca grande para 8-10 personas.<\/p>\n<\/li>\n<\/ul>\n<h3 data-path-to-node=\"7\">\ud83d\uded2 Ingredientes de calidad<\/h3>\n<p data-path-to-node=\"8\"><b data-path-to-node=\"8\" data-index-in-node=\"0\">Para la masa madre (el prefermento):<\/b><\/p>\n<ul data-path-to-node=\"9\">\n<li>\n<p data-path-to-node=\"9,0,0\">70 g de harina de fuerza.<\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"9,1,0\">40 ml de leche tibia.<\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"9,2,0\">10 g de levadura fresca de panadero.<\/p>\n<\/li>\n<\/ul>\n<p data-path-to-node=\"10\"><b data-path-to-node=\"10\" data-index-in-node=\"0\">Para la masa principal:<\/b><\/p>\n<ul data-path-to-node=\"11\">\n<li>\n<p data-path-to-node=\"11,0,0\">350 g de harina de fuerza.<\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"11,1,0\">60 g de <b data-path-to-node=\"11,1,0\" data-index-in-node=\"8\">Miel de Mil Flores de l&#8217;Avi Llu\u00eds<\/b> (el alma de la receta).<\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"11,2,0\">2 huevos de campo (L).<\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"11,3,0\">60 g de mantequilla a punto de pomada (no la fundas, debe tener textura de crema).<\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"11,4,0\">Ralladura de 1 lim\u00f3n.<\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"11,5,0\">Una pizca de sal.<\/p>\n<\/li>\n<\/ul>\n<p data-path-to-node=\"12\"><b data-path-to-node=\"12\" data-index-in-node=\"0\">Para la decoraci\u00f3n:<\/b><\/p>\n<ul data-path-to-node=\"13\">\n<li>\n<p data-path-to-node=\"13,0,0\">Pi\u00f1ones (el truco: ponlos en remojo una hora antes para que no se quemen en el horno).<\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"13,1,0\">Fruta confitada de calidad.<\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"13,2,0\">1 huevo batido.<\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"13,3,0\">Un chorrito de miel para terminar.<\/p>\n<\/li>\n<\/ul>\n<h3 data-path-to-node=\"14\">\ud83d\udc68\u200d\ud83c\udf73 Elaboraci\u00f3n paso a paso<\/h3>\n<ol start=\"1\" data-path-to-node=\"15\">\n<li>\n<p data-path-to-node=\"15,0,0\"><b data-path-to-node=\"15,0,0\" data-index-in-node=\"0\">Activamos el prefermento:<\/b> Mezcla los ingredientes de la masa madre hasta formar una bolita y d\u00e9jala reposar 2 horas en un lugar templado. Este paso garantiza la estructura del brioche.<\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"15,1,0\"><b data-path-to-node=\"15,1,0\" data-index-in-node=\"0\">La emulsi\u00f3n:<\/b> En un bol, bate los huevos con la <b data-path-to-node=\"15,1,0\" data-index-in-node=\"47\">Miel de Mil Flores<\/b>. Este paso es clave: al integrar la miel con los huevos antes de tocar la harina, nos aseguramos de que el dulzor y los aromas florales se repartan por toda la miga.<\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"15,2,0\"><b data-path-to-node=\"15,2,0\" data-index-in-node=\"0\">Amasado en etapas:<\/b> Incorpora la harina, el prefermento y la ralladura a la emulsi\u00f3n.
